These cookies are from one of my favorite cookie books, Martha Stewart Cookies. I'll give you her recipe and then put in parenthesis what I changed. You really should plan on making these up for yourself, they are so yum!
Ingredients:
3 C. old-fashion oats
1/3 C. whole-wheat flour (I did 1/2 to make them a little more cakey)
1 teaspoon baking soda
1 teaspoon baking powder
1/2 teaspoon salt (i omitted this)
1 C. packed brown sugar (I did 3/4 c.)
1 C. granulated sugar (again, 3/4 c.)
1 C butter (I did 1 c. applesauce)
1/2 C. peanut butter (I used chunky)
2 large eggs (or 3 egg whites)
1 teaspoon vanilla
2 C. salted whole peanuts (I just used unsalted peanut halves)
2 C. semi-sweet chocolate chips (I did vegan mini chocolate chips)
Directions:
~1~ Preheat oven to 350*. Mix together dry ingredients.
~2~Beat sugars, butter, and peanut butter in a bowl. Mix until pale and fluffy then add eggs and vanilla.
~3~Then mix in dry ingredients until just combined.
~4~Stir in peanuts and chocolate chips.
~5~Bake cookies at 350* for 13-15 minutes. (I only baked them for 11 as the first batch I let go for 14 mins and they were very crunchy, but if you like crunchy cookies do the whole time.)
I failed to take a picture of these delicious cookies because W ate them up really quickly. Seriously, he came home for lunch as I was pulling the first tray out and he proceeded to eat 6 of them. Oh side note this recipe makes about 6 dozen 1.5 inch cookies so I halved it. But you could always make all the dough up and freeze half of it for later, which is probably what I will do the next time I make them up.
