The other week I was trying to use up a lot of produce we had in the house. I came across a few tomatoes, a butternut squash, carrots, and some onions. Which brings us to this sauce. It is delicious! Wade even ate it up and normally he doesn't like squash. Our favorite way to eat it was over cheese-stuffed tortellini. Delish! The sauce was so simple to make too, so I'm sharing the recipe with you all so you also can enjoy it for dinner. BTW it contains no salt or anything like that so I also fed it to LB and he ate it up by the bowlful even without noodles.
Butternut Squash Sauce
1 lb butternut squash, peeled and diced
3 tomatoes, diced
1 small onion, diced
3 cloves of garlic
3 carrots, diced
1 Tablespoon olive oil
1 cup or so water (I'm sure you could do stock also, I just didn't have any)
Basil and fresh cracked pepper to taste
Saute the garlic and onions in the olive oil in a cast-iron dutch oven (or any pot I just really like making sauces in a dutch oven). Then add your carrots and butternut squash. Saute for a few minutes. add in your tomatoes, basil, and water. Let it simmer until the squash is nice and tender, about 30 minutes. Then cool slightly and puree in a blender or food processor. You may have to add more water while it blends. You'll know how much water to use by seeing when it reaches sauce consistency. Serve.
There you have it super simple and super delicious and quite healthy. All requirements in my kitchen. Quick, delicious, and healthy. Enjoy :)
Um yummy AND delish. This sounds like something even Gooner will like!!!!!! She's become SO picky! I hear that if you eat healthy during your pregnancy that you kid will also eat healthy. So it is my fault!!!!? ;)
