Recipe {Turkey Meatballs}

I love meatballs. I love making spaghetti and sauce, I would eat it everyday if W would participate. I wanted a slightly healthier twist on the classic so I decided to make up some turkey meatballs. I also swapped out the breadcrumbs and surprisingly could not tell a difference. LB has been eating these up and loving them so they are also toddler approved.

Turkey Meatballs
1 lb. ground turkey
1 egg
1/2 cup quick-cooking oats
2 Tablespoons ground flaxseed
1 clove garlic
1 bunch (about 20 leaves) of basil [or 1 tablespoon dry]
2 Tablespoons olive oil
1/4 cup parmesan cheese
Salt and pepper to taste
Food process the basil, olive oil, and garlic together. (skip this step if you are using dry basil) 
In a bowl mix the ground turkey, basil mixture, and the rest of the ingredients.
Form into 16 golfball size balls. 
Bake at 400* for 20 minutes, making sure to rotate the meatballs once. 
I doubled the recipe and then let one tray cool slightly before putting the tray in the freezer. Once the meatballs froze I took them off the tray and put them in a container for freezing.
