Recipe {homemade meat sauce}

I made this for supper last night and it turned out wonderfully so I figured I should get the recipe wrote down before I forget.
It started when I looked thru the fridge last night and saw that we had 2 quarts of roma tomatoes from our garden about to go bad along with a pound of ground beef...thus came homemade meat sauce.

Ingredients:
2 quarts Roma tomatoes
1 pound ground beef
4 cloves of garlic
1/2 small onion
1/4 cup fresh basil leaves
Olive oil
Parmesan cheese
Sea salt and pepper to taste

To get started cut the tops off your tomatoes and throw them into a casserole dish drizzle some olive oil on them throw in a few cloves of garlic and some coarse sea salt then stick them in a 400* oven. Let them bake until the tomatoes blister and burst apart.
While the tomatoes bake brown up the ground beef with a clove of garlic and half and onion, drain the fat off and add the smashed tomatoes to it.
{When you take the tomatoes out of the oven let them cool slightly then take a potato masher to the pan until the tomatoes are crushed to your liking}
Now that the tomatoes and meat are combined let it simmer in the pan until thickened, about 15 minutes. Then turn off the heat and stir in your basil.
Toss with a pound of pasta and top with Parmesan cheese.
So yummy and a great way to use up those garden fresh tomatoes and herbs laying around. Enjoy :)
