I made this up last night for dinner and it was so delicious I thought I'd share it with you all. And bonus it only took me like 10 minutes to prep so I was able to get it all done before LB woke up.
Crock-pot Shredded Pork
3lbs. Pork I used pork shoulder but I'm sure any cut will work.(I always use the cheapest meat for my crock pot since it always comes out so moist and delicious.)
1 medium onion finely sliced
5 cloves of garlic minced
1 chipotle in adobe sauce
1 bay leaf
1/2 teaspoon oregano
1/2 teaspoon parsley
2 tablespoons tomato paste
1/4 cup water
Put everything in the crock-pot, turn it on low for 8 hours and walk away. 30 minutes before it is done or when you get home from work take the bone out and shred the meat and stir everything together oh and make sure you take out the bay leaf.
I served ours with flour tortillas, black beans, and brown rice. A new obsession of mine is buying beans and rice in bulk and making them up myself. Beans taste so much better that way then from the can, but I won't judge you if you use the canned beans.
As a mentioned in an earlier post I love my crock-pot. I use it at least twice a week. I'll try to post some of the recipes as I come up with good ones. By far the easiest and one I go to most is bbq shredded meat. I just add whatever meat we have, chicken, pork butt, or beef roast and half a container of KC Masterpiece bbq sauce or homemade bbq sauce if I have time to make it up. Turn the crock-pot on for 8 hours then shred it up and put it on buns. So easy and so good.
Hope you all enjoy the taco recipe. I promise you won't be disappointed with it and the chipotle doesn't make that spicy.
