To start off my Birthday memorial weekend I decided to test out some cupcake recipes for LB's big day! I wish I could spend every weekend baking. It is so relaxing to me and I love the end result. I think these may be the winning cupcakes but I may try out a blueberry version too. I will probably spend the rest of the weekend working on decorations for his big day, going to the park, and just relaxing with my two favorite men.

Roasted Banana Cupcakes
3 roasted bananas (put unpeeled ripe bananas in a 400* oven for about 15 minutes or until the skin is completely black, let cool before peeling)
1 1/2 cups all-purpose flour
1 1/2 cups cake flour
1 Tablespoon baking powder
1/2 teaspoon salt
1 cup unsalted room temp butter
1 3/4 cups sugar
4 eggs, room temp
2 teaspoons vanilla extract
1 1/4 cups milk, room temp
1.) Mix flours, baking powder, and salt together. Set aside.
2.) Beat butter and sugar together until creamy. Mix in eggs one at a time and vanilla extract.
3.) Mix in roasted bananas. Peel them over the mixing bowl so you can get all the yummy liquid in your cupcakes.
4.) Slowly mix in flour mixture alternating with milk and ending with flour.
5.) Divide into muffin tins and bake at 350* for about 25 minutes. This recipe makes about 2 dozen.
I have been debating about which frosting I like best. Vanilla bean, chocolate, honey cinnamon, or peanut butter. They are all delicious on it but I think to be most kid friendly non-allergy inducing I may stick with vanilla bean. Or do a few of each, since the base of the frosting is the same for every kind. In any case these cupcakes are delicious and you should whip yourself up a batch this weekend.
In case you all were wondering what I look like baking...this is me mixing frosting together
To make the base for the frosting mix together:
2 sticks Butter
maybe 1 cup or more of Powder Sugar
about 2 tablespoons of Milk
Beat the butter add in powder sugar and milk until it reaches frosting consistency. Sorry I don't know the exact measurements here as I just add in everything until it taste right.
Then I divided the frosting into 4 parts and mixed in a tablespoon of peanut butter to one part. A tablespoon of honey and teaspoon of cinnamon to another part. Half a vanilla bean to another part. And a tablespoon of unsweetened dutch cocoa powder to another part.
What frosting would you choose?
Look at you in your cute apron! The cupcakes sound really good. I would do vanilla frosting, but I'm boring that way. I'll bet peanut butter would be delicious too.

ReplyDeleteYum. I think I'd have to go with vanilla bean frosting. It just sounds so lovely...vanilla bean...I like saying it :)
