It is that time of year to bust out our grill and spend many of nights watching the sunset from our deck and seeing the hot air balloons fly over head. We are fortunate enough to live right by a hot air balloon landing park so many nights we see them landing. I can't wait for LB to sit outside with us and see them over head. He loves airplanes, birds, and helicopters in the sky so I am just sure he will love these too. Our favorite meal to grill up is lemon-garlic chicken skewers and veggies.
So delicious and so easy. Here is the marinade recipe for it.1 lemon, zested and juiced
1/4 cup olive oil
3 cloves garlic minced
1 sprig fresh thyme
1 sprig fresh rosemary
fresh cracked pepper and sea salt to taste
Mix all those ingredients together then divide between to bowls. In one bowl add a pound of diced chicken to and let marinade for a few hours. In the other bowl I mix together one onion diced, one yellow, red, and orange pepper diced, cut up asparagus and portabella mushrooms and let them marinade too. Then you just grill em up. So good and even delicious to use the leftovers in a pasta dish with some cheese the next night.

That looks delish! SO GOOD! I LOVE to grill shrimp! Q hates that since they are unhealthy "bottom feeders" but SO GOOD! I love it!
