A warm welcome to fall

I am so excited to see signs of fall and smell it in the air!

Friday night we went into my favorite tea shop and they have a new fall tea. It is so yummy!  It's called Almond Apple Tisane. It taste like the roasted almonds you find at pumpkin patches :) I even bought some to enjoy at home. I love fall!!

I know its only the beginning of September, but lets face it as soon as Starbucks puts out Pumpkin Spice Latte I begin fall baking, decorating, and celebrating. Fall celebrations do not last long enough. It's like as soon as fall begins Thanksgiving decorations come out and then Christmas and before you know it it's summer again! Let's take some time to enjoy everything there is to love about fall before we start ringing in the holidays.

So in honor of fall I made Pumpkin Chocolate Chip Cookies... twice this week! What can I say I love pumpkin. Tomorrow I am going to bust out my yankee pumpkin pie candle.

So for all those who want the recipe for the Pumpkin Chocolate Chip Cookies, here it is. I half the recipe and get 2 dozen cookies. But you could make them all and freeze some, or give them away :)
  • 1 cup (2 sticks) unsalted butter softened
  • 1 cup white sugar
  • 1 cup light brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup canned pumpkin puree
  • 3 cups all-purpose flour
  • 2 teaspoons baking soda
  • 1/2 teaspoon salt
  • 2 teaspoons pumpkin pie spice
  • 2 cups chocolate chips
  • 1 cup pecans
Beat butter until creamy. Gradually add in the white and brown sugar until creamy. Then gradually add in the eggs, vanilla, and pumpkin puree. Add flour, baking soda, salt, and pumpkin pie spice until all mixed. Fold in the chocolate and nuts. Bake at 350* for 15-18 minutes.

  1. I really want to make these! I just don't know if I will be able to find the pumpkin ingredients at the store. I have seen pumpkin chunks, but not sure about the puree. If I can't find pumpkin spice, could I use an alternate? Like ginger/nutmeg/cinnamon or something?

    So strange it is Fall. It looks and feels like spring here....I miss my fall yankee candles too...

  2. oh yes amanda you can us ginger/nutmeg/cinnamon instead. I just have a huge thing of pumpkin pie spice from starbucks so i use that. but all those things are in it so you can use them instead :)
