Yummy cupcakes

Okay so last week I posted about my newest craving and how I have finally perfected my cupcake recipe. And since one of you asked for a picture I decided I should post it along with the recipe so you all can become addicting as well :)

Ok so I made Vanilla Bean Cupcakes, but you could do any kind with this recipe just omit the vanilla bean and add whatever you like.

This recipe makes 12 cupcakes.

Cupcake:
1 3/4 cup Cake Flour
1/4 teaspoon salt
1 1/4 teaspoon baking powder
1/2 cup butter (unsalted) room temperature
1 cup sugar
1 egg plus 2 egg whites (room temperature)
1/2 cup whole milk
1/4 cup sour cream (or plain greek yogurt if you don't have sour cream)
1 teaspoon vanilla extract
1/2 vanilla bean

1.) Preheat oven to 350*.
2.) Split open vanilla bean and scrape out seeds. Place seeds, empty pod, and milk in a small pot. Bring to a simmer for a few minutes, take off heat and let cool. Remove pod from the pot and disgard.
3.) Beat butter until crumbly. Then add the sugar and beat until fluffy and light. Add in the egg until incorporated. Then add in egg whites, one at a time until creamy.
4.)Mix flour, salt, and baking powder in a bowl. Add sour cream (or greek yogurt) to the milk and whisk until smooth.
5.) Alternate adding the flour mixture and the milk mixture into the butter/sugar/eggs. Being sure to start and end with the flour mixture. Do not overbeat.
6.) Divide the batter into 12 muffin tins lined with paper lining. Bake at 350* for 18-20 minutes or until slightly golden.

Frosting:
1/2 cup room temperature butter
1 1/4 cup powder sugar
1 teaspoon vanilla extract
1/2 vanilla bean (remove the seeds and save the pod for a later use)

Beat the butter and slowly add the powder sugar. Add the vanilla extract and the vanilla bean seeds until nice and creamy.

This recipe was so easy to make and came out sooo good. I have been collecting and changing cupcake recipes for years now and I have finally figured out one I really love. I always use cake flour when making cupcakes or cakes cause it makes them so much more fluffy and light, but if you don't have cake flour you can just use all-purpose and sift it a couple times. But if you can get cake flour try and I assure you it will make all your recipes that much better :) Hope you all enjoy and let me know if you try them either as Vanilla Bean Cupcakes or if you put your own spin on.
