Another Peanut Butter Chocolate Chip Cookie Recipe

I love peanut butter and chocolate chips, so I can never have enough cookie recipes that combine these two things. I spent some time Saturday working on a new recipe that combined my two loves and this one is my new favorite recipe! I may or may not have eaten 6 cookies the day I made them. But hey they are some what healthy, whole wheat flour and homemade applesauce are in them so that makes them a healthy food, right? ;) Plus LB was dealing with a high fever (from an ear infection, post to come on that from hubs soon) and had been up all night so I needed something to munch on during the late night feedings. Anyways, here is the recipe for you all. Perfect cookie to wipe away the stress of a long day or week.

Peanut Butter Chocolate Chip Cookies
1/2 C. applesauce
1/2 C. chunky peanut butter
1/2 C. sugar
1/4 C. brown sugar
1 egg
1/2 teaspoon vanilla
3/4 C. all-purpose flour
1 C. whole-wheat flour
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1 C. chocolate chips

Preheat oven to 350*. Combine applesauce, peanut butter, sugars, vanilla, and egg. Mix until well blended and creamy. Combine the dry ingredients (minus chocolate chips) and slowly add them in to the wet mixture. Once combined stir in chocolate chips.
Scoop them onto cookie sheets and flatten slightly. *The dough will be a little sticky* Bake for about 10 minutes at 350*.
When they come out the cookies will be so gooey and delicious looking, resist the urge to pop them into your mouth or you will burn your mouth but it is worth it if you can't resist :)

Enjoy!
