I have been reading on some blogs lately about crock-pot oatmeal and thought they all sounded so good. At first I was a little disappointed in myself for never thinking of cooking oatmeal this way but then I got over it and got to creating ;) So far this has been W and I's favorite way to have it and it would make a great quick breakfast to do for overnight guest. Let me know if you all have any good oatmeal recipes. I do love me some oatmeal!
Blueberry-Coconut Oatmeal
2 servings
1/2 cup steel-cut oats
2 Tablespoons flax seed
2 and 1/2 cups coconut milk
1/2 cup coconut flakes
1/2 cup bluberries
Put all ingredients into a small greased crock-pot and turn on low for 8-10 hours. In the morning stir it well. I ended up adding about 1/4 cup of coconut yogurt to the finished product but you could also add more milk instead. I just had some coconut milk yogurt that was going bad.

where do you get all these fancy oats. All I know is quaker, but this looks delish! I still want to try the pumpkin chili recipe too! Just have to get over this cold so I can cook again! Hope LB is doing better.
