It's that time of year folks. When our waistlines expand and we enjoy home baked goodies mixed with conversations with family and friends. I love this time of year! I love warming up in front of a hot stove while I bake and cook until my heart is content. Knowing that my goodies will bring smiles to others faces. This weekend I began trying out some Thanksgiving recipes...I know its less than 2 weeks away but I wanted to test out a few nut-free desserts before I debuted them to a group. This cookie I absolutely loved! It was soft and chewy and loaded with yummy goodness. I think for Thanksgiving I am going to make them into bars with white chocolate chunks. Yum! Okay so here is the recipe:
Oatmeal Chocolate Chip Cranberry Cookies
1/2 cup PLUS 6 tablespoons unsalted, room temperature, butter
3/4 cup brown sugar
1/2 cup sugar
2 eggs, room temperature
1 teaspoon vanilla
1 1/2 cup all-purpose flour
1 teaspoon baking soda
3 cups old-fashion oats
1 cup chocolate chips
1 cup craisins
Preheat oven to 350*. Cream together butter and sugars. Add vanilla and eggs one at a time. Mix until creamy. Mix in flour and baking soda. Stir in the oatmeal, chocolate chips, and craisins.
Bake for 8-10 minutes. I did right at 8 minutes and they were slightly underdone...which in my book is perfect. But if you like them a little more done do 10. This recipe ended up making about 5 dozens, but I make smaller cookies. (That way I don't feel guilty eating 4 or 5 at a time)
