Recipe {Cranberry Orange Muffins}

As I mentioned in my last post this weekend I had a big cook ahead day. One of the things I made were these muffins.
Seriously, so good. Filled with big plump cranberries and dotted with pretty orange zest. Oh and topped with crunchy raw sugar. I planned on making them up then wrapping and freezing them individually to pop out for a quick breakfast but really I have just been eating them all day long. Don't worry, I've shared a few with LB and W. :) I found the recipe for these beauties here. The only thing I did different was added 1 1/2 cup fresh cranberries (instead of 1 cup) and used fresh orange juice. I also sprinkled raw sugar on the top to give it an extra crunch. They are great not too sweet but not too tart either. We've been enjoying them in the mornings with a tall glass of green smoothie and some hot tea. Even LB drinks up his green smoothie and asks for more.

  1. Oh yum, and more yum. I have like EVERY single muffin you have ever made me AND every recipe you have ever posted. You should make a muffin cook book because I would totally endorse you. And get fat.
