Crock-pot Recipe {Pork Carnitas Soup}

Last night I was really in the mood for something spicy and quick and something I could throw in the crock-pot and forget about. I thought about doing a chicken tortilla soup but I had some left over crock-pot pork thawing in the fridge and thought why not use pork instead of chicken. And my oh my was it so good! Seriously y'all W finished eating it and said this is one of the best soups you have ever made. And that says alot considering I make soups all the time. So here is the recipe. 

Pork Carnitas Soup
2 cups Shredded Pork (I used this recipe)
1 container (32 oz.) chicken stock
1.5 cups black beans (I make up a whole bunch of black beans then freeze them in individual bags, but you could just use a can of black beans rinsed and drained)
1 can rotel
1 can green chiles
1 Tablespoon tomato paste
1/2 Tablespoon cumin 
1 Tablespoon chile powder
Throw all the above ingredients in a crock pot cook on low for 2-4 hours. 
I topped ours with garden fresh jalapenos, cheese, home-made salsa, and tortilla chip strips.
